The benefit of recording off the handset of a phone is that you should hear both sides of the conversation (on most phones - that have sidetone), and your voice will be lower volume - about equal to that of the person on the other end. You don't get that benefit recording off a single line analog phone line, where your voice will be much louder.
SB Win Logger has a choice of formats to save the voice. Their own format is incredibly good at reducing the file size while making the calls perfectly understandable.
